This summery Berry Chicken Salad from @allthehealthythings is an easy and healthy lunch or dinner perfect for busy weeknights!⁠

Ingredients

  • 2 boneless skinless chicken breast (one for each salad)⁠
  • 1/2 tbsp avocado oil⁠
  • paprika⁠
  • chili powder⁠
  • garlic powder⁠
  • mixed greens⁠
  • baby spinach⁠
  • strawberries⁠
  • raspberries⁠
  • blueberries⁠
  • blackberries⁠
  • sliced almonds⁠
  • feta cheese⁠
  • avocado⁠

Honey Lime Vinaigrette

  • 1/2 cup olive or avocado oil⁠
  • 1/4 cup lime juice⁠
  • 2 tbsp minced shallot⁠
  • 2 tbsp honey⁠
  • 1 clove garlic⁠
  • 1 tsp salt⁠
  • fresh cracked black pepper

 

    Step by Step Instructions

    Step 1

    1. Heat a skillet over medium-high heat. While the skillet is heating, season the chicken breast with a few shakes of garlic powder, salt, pepper, paprika, and chili powder. When the skillet is hot, add in 1/2 tbsp of avocado oil and then add the chicken breast. Cook the chicken for 4-6 minutes on each side until cooked through. Let the chicken rest while you assemble the salad and dressing.

    Step 2

    To make the vinaigrette, add all of the ingredients to a high-powered blender and blend until smooth.

    Step 3

    Assemble the salads with greens, berries, cheese, almonds, avocado, and sliced chicken breast. Drizzle the vinaigrette on top and enjoy!
