This summery Berry Chicken Salad from @allthehealthythings is an easy and healthy lunch or dinner perfect for busy weeknights!â
Ingredients
- 2 boneless skinless chicken breast (one for each salad)â
- 1/2 tbsp avocado oilâ
- paprikaâ
- chili powderâ
- garlic powderâ
- mixed greensâ
- baby spinachâ
- strawberriesâ
- raspberriesâ
- blueberriesâ
- blackberriesâ
- sliced almondsâ
- feta cheeseâ
- avocadoâ
Honey Lime Vinaigrette
- 1/2 cup olive or avocado oilâ
- 1/4 cup lime juiceâ
- 2 tbsp minced shallotâ
- 2 tbsp honeyâ
- 1 clove garlicâ
- 1 tsp saltâ
- fresh cracked black pepper
Step by Step Instructions
Step 1
1. Heat a skillet over medium-high heat. While the skillet is heating, season the chicken breast with a few shakes of garlic powder, salt, pepper, paprika, and chili powder. When the skillet is hot, add in 1/2 tbsp of avocado oil and then add the chicken breast. Cook the chicken for 4-6 minutes on each side until cooked through. Let the chicken rest while you assemble the salad and dressing.
Step 2
To make the vinaigrette, add all of the ingredients to a high-powered blender and blend until smooth.
Step 3
Assemble the salads with greens, berries, cheese, almonds, avocado, and sliced chicken breast. Drizzle the vinaigrette on top and enjoy!
